Mini Angel Food Cakes topped with Advocaat


Something that is very popular in Germany around Easter is "Advocaat". It is a liqueur made with egg yolks, and is often used in cakes and desserts. People also drink it straight, usually in chocolate shot glasses.

It is widely available in Germany in supermarkets or from Artisan manufactures. Many people also make their own. I have never tried it, but I found a recipe for homemade Advocaat, in case you want to try.


I don't make angel food cake often, because you need so many egg whites, but those little ones are perfect for just using up a few. For me angel food cake always needs some kind of topping, and this is really the easiest cake dress up you can do. Just pour as much on the ready baked cakes as you like, and you are done. The advocaat is pretty thick, so no need for adding anything else to it. I think the color is really pretty for any Easter table.

Triple Coconut Cupcakes


I have been noticing that coconut cupcakes seem to be awfully popular around Easter. I don't know why, but I guess it's probably because coconut shavings make very cute Easter egg nests. So I am going to give this idea a try.


I call this Triple Coconut Cupcakes, because they are not only coconut cupcakes with coconut buttercream, they also hold a little surprise inside. I put some Raffaellos inside each of them, those really addictive coconut confections.


You can decorate them for Easter with some jelly eggs with matching cupcake liners, or just with coconut shaving all year round. They are very rich and a real treat for coconut lovers, like my husband.

Brioche Easter Bunnies


Easter is just around the corner, so it's time to bake some Easter treats. Baking some kind of sweet yeast bread for Easter brunch is a very common tradition in Germany. Usually it comes in the form of a braid or wreath. It can be plain and enjoyed with butter and jam or filled with nuts or dried fruits.


I wanted to make some different shape this year so I made some Easter Bunnies. But you can use the same dough for making a braid or wreath as well. The dough is great to work with and tastes really good.


If you are like me you probably don't want to get up really early on Easter morning to prepare your baked goods. You don't have to. You can prepare the dough the night before and let it rest in the fridge overnight. Then you just have to shape and bake the bunnies in the morning. I made a note in the recipe, at what point you can interrupt the process.


My little bunnies were so well liked that I am gonna make at least two more batches until Easter. I hope you will like them too.
